I'm always looking for new recipes that fit my dietary habits. I found so many from this forum that I decided I would contribute one of my own, and one of my favorites. This recipe is for olive bread, and it's completely vegan. The ingredients are:

  • 3 cups flour (I like whole wheat)
  • 1.5 cups warm water
  • 2 tsp active dry yeast
  • 3 tbs olive oil
  • 2 tbs white sugar
  • 3/4 cup chopped Kalmata Olives 
  • 4-5 cloves of Garlic, chopped
  • 1 tsp salt
  • rosemary/sage/dill to taste (optional)

To make the bread, combine all ingredients in a bowl and knead the dough that forms for 10 minutes. Allow the dough to sit in the bowl (covered) for 40 minutes, to rise. Then knead the dough again for a few minutes and set it in the oven in whatever you want to cook it in. Allow it to rise again for 30 minutes, and then bake for 25 minutes at 400 degrees. Don't forget to coat the pan/surface with olive oil or some other non-stick substance. 

Once the bread is finished baking, remove it from the oven and enjoy with some balsamic vinegar or olive oil and herbs. I've attached a picture to entice you guys. Enjoy!

I'm just starting to kind of like olives- I never ate them for all my life, but as a veggie they taste better than before, haha. Does this have a very overpowering olive taste or no? Prolly a stupid question... but it's 5 am all I can do are stupid questions.

The great thing about this is you don't even have to add the olives haha I was out of olives last time I made the bread, so I just went without. It tasted great :) to me, the taste isn't overpowering at all. Then again, I love olives :) they are such a good source of fats and oils for vegetarians.
