Black Eyed Peas Masala – Spicy Indian Style !!

Ingredients

1 medium onion, chopped

1 spring onion, chopped (green part only)

1 cup black eyed peas, washed, soaked overnight

1 diced tomatoes (without seeds) and green chilly peppers

1 tablespoon virgin olive oil

½ diced green, red, yellow bell peppers

½ Lemon

1 tablespoon fresh diced green coriander

1 teaspoon salt

1 teaspoon Indian all spice Masala/ Nestle Curry Masala (Optional) /

1/2 teaspoon freshly ground black pepper

3 cups water

Directions

In a pressure cooker, half steam overnight soaked black eyes peas. In a pan, sauté onion until

golden. Add diced chillies and bell peppers, sauté. Add salt and Masala , sauté again. Add black

eyed peas after draining water. Mix well on low heat. Add chopped spring onion and diced

tomatoes, mix well. Take the pan off the gas, pour some lemon juice and mix well.

Serve with garnished fresh coriander and enjoy this high protein simple vegetarian diet.

** Sprinkle some dried oregano if you like :)

Wow! I eat black eyed peas (for luck) every New Year's and will definitely try this (or at least as close as I can get.)
