Hey guys, I have a question to put to the group. I'm a student at the University of Connecticut, and being a vegetarian got harder when I went off the meal plan and moved into my own apartment.
I was wondering if you guys have any favorite microwave, easy-to-make vegetarian meals and snacks, especially for around lunch time?
I usually have about half an hour to do lunch, so this semester I've pretty much just been microwaving those bags of frozen veggies, or rice and veggies, adding a little EVOO and some balsamic vinegar. Takes five minutes to do. But I'm getting tired of it, and was wondering if you guys had any ideas. Thanks!
