Ingredients

1 lb (450 g) fresh root ginger

3 pt (1650 ml) water

1 lb (450 g) raw cane sugar

juice of 2 limes

Method

Thinly peel the fresh ginger, grate and mix with the water in a large saucepan. Bring to the boil and simmer for 3-4 minutes. Cover the pan, turn off the heat and leave for at least 24 hours. Strain the liquid through a sieve. Add the lime juice and stir in the raw cane sugar until thoroughly dissolved. Chill.

Serves 6-8

Note: This drink is best left to mature for a day before drinking. It is most refreshing served cold with plenty of ice.
