ripe medium-sized mangoes
juice of 1 lime
1½ pt (550 ml) water
raw cane sugar
Peel the mangoes, cut the flesh from the central stone and either rub through a fine sieve or liquidize in an electric blender. Add to the mango purée, the lime juice and water. Add sufficient raw cane sugar to sweeten, stirring the mixture until the sugar has dissolved. Chill and serve.
A tropical flavoured drink, fresh orange or pineapple can be added for a more exotic blend of flavours.
