Ingredients

1 ripe pawpaw

½ pt (275 ml) orange juice

juice of 1 lime

2 pt (1100 ml) water

4 oz (115 g) raw cane sugar

Method

Peel the pawpaw, cut it in half, scoop out and discard the black seeds. Roughly chop the flesh and liquidize in an electric blender until a smooth purée is produced. Mix the pawpaw with the orange juice, lime juice and water. Stir in the raw cane sugar until it is dissolved. Chill.
