3 medium-seized carrots

4 oz (115 g) wholemeal flour

½ tsp baking powder

¼ tsp ground cinnamon

¼ fleshly grated nutmeg

3 oz (85 g) raw cane sugar

2-3 tbs milk or soya milk

vegetable oil for frying


Peel and grate the carrots. Stif the flour, baking powder and spices into a bowl. Add the sugar and mix in the grated carrot. Pour on the milk a spoonful at the time stirring the ingredients to produce a soft dropping consistency. The Mixture should not be too wet. Heat the vegetable oil in a heavy frying pan. Drop tablespoons of the carrot mixture into the oil and fry until the fritters are golden brown on both sides. Serve hot.

Serves 4

These are delicately spiced sweet fritters.
