2 oz (55 g) cornmeal

2 oz (55 g) wholemeal flour

½ tsp baking powder

¼ pt (150 ml) coconut milk

½ medium onion : 2 spring onions

½ hot pepper : ½ tsp fresh thyme

2-3 mint leaves : vegetable oil for frying


Mix the cornmeal, flour and baking powder together in a bowl. Gradually stir in the milk until the mixture is smooth. Peel and finely chop the onion, chop the spring onions, de-seed and finely chop the hot pepper. Add these ingredients to the cornmeal mixture together with thyme and chopped mint leaves. Heat the vegetable oil in a fry pan and drop in tablespoons of the mixture. When one side is golden brown turn them over and fry the other side.
