6 firm ripe bananas

2 tbs cornmeal

2 tbs coconut milk

3 tbs vegetable oil


Peel the ripe bananas and slice them in half lenghtways. Coat the banana halves with the cornmeal, pressing the cornmeal on gently. Heat the vegetable oil in a heavy frying pan over a medium heat. When the oil is hot, quickly dip the banana halves in the coconut milk and then transfer to the frying pan. Fry until golden brown, turning frequently.
