Black Bean & Sweet Potato "Chili"

2 med. sweet potatoes (about 12 oz each), peeled and cut into 1/2-inch pieces

4 carrots, peeled and cut into 1/2-inch pieces

4 celery stalks, cut into 1/2-inch pieces

2 cans (15-19 oz ea.) low-sodium black beans – Do NOT drain

1 tbl olive oil or vegetable oil

1 med. onion, chopped

2 garlic cloves, chopped

1 tbl chili powder

1 jar (16oz) mild pace picante or pace salsa (you can use any type of salsa, but the salsa will determine if the base is sweet or hot)

1 cup water

*dried cilantro for taste

1. In large saucepan, heat oil over medium-high heat until hot. Add onion and garlic; cook, stirring occasionally, until soft, 4 minutes.
2. Stir in sweet potatoes, carrots and celery, chili powder, salsa, cilantro and water; heat to boiling. Reduce heat to medium-low and cook, stirring occasionally, until potatoes, celery and carrots are fork-tender. Carrots and celery can have a little crunch to them, as desired.
3. Add beans with their liquid and cook 10 minutes longer.

RECIPE MAKES 10 CUPS. Gluten Free - Vegan

I was vegetarian since birth but later I started eating Meat for fun for a very short period, but very soon a Simple thing struck in my mind how can I eat such beautiful creatures of nature with so much zest of life.

Animals/birds, they live so joyously and struggle so much to live on this planet full of agony created by humans. We have big responsibility towards them and they are WITH us on this planet not FOR us!

I hope to connect some beautiful souls through this site. I prefer discussing Meditation, Science, Philosophy, Photography, Travel, Spirituality and other wonderful subjects.

- 1 ripe banana
- 2 whole eggs
That’s it. Just mix together in a bowl and mak...
e sure the banana is all mashed. Then spray your pan with some "spray & cook" or coconut oil. On a low to medium heat, scoop some of the batter into the pan & give it about 20-30 sec, flip, and done! Serve and eat!
*Some advice would be to make them small so its easier to flip

Sliced okra boiled with some soy sauce and water as the sauce, then topped on boiled noodles or Japanese udon noodles. Served with some basil or truffle olive oil (my favorite) !!!

try champ with peppered sauce .. Its Irish potato dish made from scallions and potatoes .. you can use butter and milk but alternatively hot water salt boil the scallions and potatoes until soft mash them in together pore over peppered sauce and .. bon appetite easy munch meat free <3
