I love to do on the weekend, a fake chocolate mousse that I sometimes freeze to be icecream, it's so easy, and tasty!

And so it takes:

1 Avocado

1 Banana

1 plain soy iogurt

3 tablespoons of cocoa powder with no sugar added

1 teaspoon of peanut butter

1 tablespoon of a kind of sugar or  sugar substitute (or more, if you prefer)

2 teaspoons of flaxeseed flour

A lot of cinnamon (I really love cinnamon)

Put everything in the blender until it's a puree, then, if you like put some nuts and blend just a bit so it has some crunch.

Hey guys, just posted a recipe for dill roasted potatoes on my site

  1. Preheat the oven to 375. Wash and cut the potatoes into cubes. Then mince the dill (if it came in a bunch use almost all of it). Set about 1/4 cup aside for your sauce if making. Take 1/2 cup of minced dill and mix with 1 tbsp olive oil. Massage this mixture into the potatoes, and place on a baking sheet. Sprinkle some salt and pepper on the potatoes and bake for 25-30 minutes, turning the potatoes over every 10-15 minutes so they brown evenly.

For the ingredients list and sauce please visit my site. Comment and let me know what you think! I made these for Easter dinner and people adored them. :)

BANANA ICE-CREAM (simple, fast and delicious!)

  • 4 ripe bananas, cut into chunks
  • 3-4 tbsp (soy or almond or coconut) milk
  • 2 tbsp toasted nuts or strawberry (I prefer strawberry)
  • 1 tsp vanilla essence
  • 2 tbsp chocolate sauce or marmalade

Put the banana chunks on a flat tray and cover well. Freeze for at least 5 hr, or until frozen through. When ready to eat throw the banana into a food processor and whizz until smooth with enough of the vegan milk and vanilla essence to achieve a creamy texture. Put into 4 bowls or glasses, then top with the sauce/marmalade and nuts/strawberry. Enjoy it =)
