Presently have an obsession with this sandwich, Pretty Straight forward to make, absolutely delicious and can be adapted for vegans.
Baguette/White or Brown Bread (Baguette the best)
Ripe Tomatoes (Advise Cherry Tomatoes)
Fresh Vegetarian Mozzarella (or Vegan Mozzarella) 70grams
Fresh Basil Leaves (Hand full)
2/3 Tablespoons Balsamic Vinegar (the Key)
2 Tablespoons Olive oil (optional)
Slice the tomatoes and mozzarella and layer on to the bread. I tend to grill this and the slice of bread for a couple minutes after this and feel it works well- though not quite a toasted sandwich. Layer the Basil Leaves on top the Mozzarella and Tomatoes. Drizzle with the Balsamic Vinegar and Olive oil (or a mixture can be used as a dipping sauce). Enjoy!!
