Spring lettuce salad with salt-and-vinegar Roseval potato chips, roasted shallots, hard-cooked farm egg and Parmigiano-Reggiano cheese

Just something I made up one evening because I wanted rabbit food for dinner. *wink*

Roseval potatoes are an heirloom variety of fingerling potatoes, originally from France. They generally have pale white or ivory flesh with a reddish or pink-tinged hue. Lovely roasted, steamed or pan-fried, or in this case, as homemade salt-and-vinegar potato chips.
