I am a proud pet parent. I have quite a few 'kids', and I love them all. I have 5 dogs, 3 cats, an Emperor Scorpion, leopard gecko, bearded dragon, painted turtle,and 2 mice.(no, I'm not an animal hoarder). I like to rescue 'kids' from high kill shelters.

Help from the diet conscious

I am jumping into the diet and exercise pool with both feet.  I was told by a fitness advisor that I need to be on a 1700 calorie/day diet for the first few weeks.  I can figure out what I need to eat to maintain that diet, but does anyone have any ideas on what I can snack on that won't add to my caloric intake?  

I'm pretty much admitting to you that I like to snack.  I just want it to stay healthy.

I just want to say thanks to those of you who live outside of the US for being on this group.  Not only do I get a vegetarian's perspective from around the world, I also realize how ignorant I am for having English be my only language.

If anyone wants to throw some ethnic recipes my way, feel free.  I love spicy foods, and clean, refreshing foods.  I'm having so much trouble finding something I want to make for dinner.

Am I the only one?

I find myself perusing the internet for recipes.  I get tired of pasta, veggie burgers, soup, etc, for dinner every night.  Many of the recipes that I find involve mushrooms, eggplant, or beets.  If I had to name three foods that I do not like, those would be them.

Am I the only one who finds it hard to find it hard to find things for dinner?

Any ideas?

Hello Becky!

Anyone looking to change themselves physically should start in the kitchen. As a vegetarian looking to lose weight you can alter your diet to take in less carbs (notice I said less, not 'no-carb') and increase your fiber and protein. Power-foods like Black Beans, Brown Rice, Quinoa, Peanuts and Almonds are a must have in a veggie kitchen. Also, if you eat eggs, try to eat 2-4 egg whites per day. 

Cardiovascular exercises will help you build stamina and sweating will get rid of the excess water weight from medications. 

Drinking a gallon, or so, of water per day will also jump start your body's metabolism.

I try to stay away from eggs in their natural form.  I haven't scrutinized the food that may contain eggs.  I also try to stay away from pasta, but pizza and bagels are a weakness for me.  I will definitely try the power foods you have suggested.

I definitely need to drink more water.  I drink too much coffee and not enough water.

Thank you so much for getting back to me.  It's nice to have a veggie 'friend' that lives just 'down the street'.

Becky, if you have any other questions or anything at all, reach out to me or anyone else on here. We are all veggie friends! You don't have to cut out the foods that you love, either. For example, if I know that I am doing cardio the next day (like a long run or a spin bike workout) I will eat a bunch of carbs... like yummy pizza! But if I know that I won't get to the gym on Wednesday, for example, I won't take in many carbs on Tuesday and Wednesday. The Atkins diet is the lazy man's diet, because carbs are actually GOOD if you use them to fuel your workouts. But, too many people stuff their face with pasta every night and sit on their butts every day.
