Juho's ebin vegan coconut milk stir-fry
---------------------------------------------

300g of meat substitute of your choice
(definitely works with many types, I've done lots)
100g of white mushrooms
7 dl of shredded cabbage
1 shredded carrot
1 bell pepper cut into small pieces
2 tablespoons of red curry paste (optionally just 1 spoon for a milder taste)
1 tablespoon of ketjap manis
4 dl of coconut milk
½ dl of sweet chili sauce
vegetable oil for frying (e.g sunflower oil can add a nice texture.)
OPTIONAL: Add a clove of garlic for additional taste


Fry the vegetables (bell pepper, carrots, cabbage), mushrooms
and your meat substitute of choice lightly until they become slightly brown.
Then add the rest of the ingredients and let the food stew for a few minutes.

Serve the stir-fry with jasmine rice.

Note: Feel free to experiment with the spices :F I personally put like 6-7 cloves of garlic in it (I'm an addict I know lol) and habanero to give it a little taste and punch.

Garlic sauce works well with this~~ (Then again I put garlic sauce to everything, from sandwiches to spaghetti....)
